В blender во время процесса развертки мы можем располагать ее на плоскости так, как нам угодно. Можно изменять размер проекции, ее расположение и масштаб. 
Также хорошим примером развертки будет картография. В ней поверхность Земли (которая имеет сферическую форму) проецируется на карте (плоскости). У данного способа есть свои недостатки, а именно, страны и государства, которые ближе к Северному или Южному полюсам выглядят меньше, чем те, которые находятся ближе к экватору. 
На данном изображении наглядно представлено то, как текстура отображается на 3D-объекте и на UV-развёртке. Поэтому, при создании развёртки, каждая точка имеет координаты X,Y,Z и U,V.

I unwrapped everything automatically and it endend up being really bad for painting. How can I delete the unwrapping and start again?

You can start again and re-do the UV unwrap just by doing the unwrap command again. In edit mode press U and select any of the methods. The UVs will be redone with the new method and the old UVs will be discarded. The mapping methods are explained here.
There is one exception to the above and that is UV pinning. If any of the UV vertices are pinned (they are red), you need to unpin them first with Alt + P . Pinning prevents UV vertices to be re-done.
Deleting the UVs is another thing. One mesh can have multiple UV unwraps and you will find them in Mesh Properties:

You can delete any UV map completely with the — button.
If there is no UV map awailable, the unwrap operator U does create one automatically when unwrapping.
How the hell can I remove the UV map?

No, not the texture. And no, not the material. I just want to remove the UV mapped out vertices, without deleting the object, because I want to finish the model, and then start retexturing.

In the mesh panel find the UV section and use the — button to remove the UV map.

And where is that supposed to be? There’s no ‘UV’ option, only ‘UVs’ and that doesn’t lead to it either. It’s so stupid how there’s literally nothing telling you how to remove the UV map.

EDIT 2: FFS, it just turns the UV MAP into 2 circles inside a box. It doesn’t remove it.

Новичок, надеюсь, более-менее корректно изложу.
Делал зеркальный кораблик. У него и развертка была (прикрепил) соответствующая. Я понатворил разное, а откатиться уже не могу. как изначальное расположение сделать?
Копирование объекта не помогло. Не рисовать же корабль по-новой?
Прикладываю то, как стало после того, как развернул (unwrap) и то, как она изначально была.. НПросил помощи в пабликах. Сказали, что если не сохранил изначальный, то лепить корабль заново.
